THE WINE ESTATE
THE VINEYARD
- Located at the top of MONBAZILLAC, south of Bergerac, in Dordogne (Nouvelle Aquitaine)

- White grapes: Semillon, Sauvignon blanc, Sauvignon gris and Muscadelle
- Black grapes: Merlot, Cabernet Franc, Cabernet Sauvignon and Mérille
HOW WE WORK
- Pleasure: daily at work and in our wines too
- Respect the terroir and its tipicality: we work the soil with our heads and we aim to limit impact and inputs in the vineyard and in the cellar
- Respect the grapes: the keystone is the ripeness in order to elaborate high-quality wines: let the fruit speak for itself.
- Respect living beings and the environment: set up best practices to limit our impact on Nature and living beings (natural grass growing, green manure, recycling, rain water recovery…)
What we actually do!
- Since 2008: no use of any chemicals, mechanical working only
- Since 2021: organic farming certified

OUR WINES
A bit of history:
- According to the legend, in 1080, clerks of Monbazillac forgot to harvest a plot of vines. Then they noticed a rot had spread all around the grapes.
- In 1936 only, the Monbazillac Protected Denomination of Origin is created, one of the five first in France and the first for sweet wines.
- Monbazillac PDO is delimited by 5 villages : Monbazillac, Colombier, Pomport, Rouffignac-de-Sigoulès and Saint-Laurent-des-Vignes.
Noble rot?
- The fungus that spreads on the surface of the grape berries is commonly named: Botrytis Cinerea or noble rot. The fungus to grow in the vineyard requires specific weather conditions: morning fogs from the proximity of the Dordogne river and sunny afternoons.
- Once the rot has pierced the skin of the berry, the water contained in the juice evaporates and sugar concentrates.
- Grape berries will be carefully and manually harvested, in several goes, in order to respect the sugar concentration levels.
- Botrytised berries give specific aromas (honey, acacia, candied fruits, quince…) to the wines that come out of it.
